Do you know that while Seville oranges are abundent in Seville, most of them are exported to the UK for making marmalade in the winter season? And many of Spanish friends really don't understand why the Brits would be so mad about these oranges. The high level of pectin in the rind and seeds of these oranges is perfect for making marmalade. It is actually quite a time-consuming process to make the marmalade - we know this because we make our own marmalade for this chocolate!
